The Pavelot family is one name with a long history in this village dating back to the 17th century and record of ancestors making and selling wine goes back multiple generations. At present, it is brother/sister team of Luc and Lise Pavelot who manage the 9 hectare domaine. Both graduates of Beaune’s renowned winemaking school, and both having gained experience in regions outside of their home, Luc in northern California at Navarro Vineyards and Lise in the Loire Valley at Domaine Dagueneau, before both returning home and taking over from their father Régis Pavelot, in the early 1990s.
“The 2012 Savigny-les-Beaune Village has a radiant bouquet with red currant and quince aromas that are nicely defined. The palate is smooth right from the start with a mixture of red and black fruit, sappy ripe tannins and a touch of white pepper sprinkled over the succulent finish. This is very satisfying for a village cru.”
