-Brothers Jean-Marc and Vincent Joblot are famed in the Côte Chalonnaise appellation of Givry. The natural amphitheater of Givry uniquely protects from westerly winds. They farm 14 hectares sustainably, along with Jean-Marc's daughter Juliette, and practice severe de-budding and green harvesting. Unlike many vignerons who judge the ripeness of their grapes on brix, the Joblots base their decision on acidity levels. Sorting occurs in the vineyards, and they are known to drop up to 40 % of a vintage if it fails to meet their standards.
