Following the metaphorical principles of Ramon Llull's medieval "Ars Magna" table, our CABERNET SAUVIGNON can be described by the Latin term "Potestas", meaning powerful, skillful and dominant. The grapes are grown on a sea-facing vineyard with clay loam soil and astonish every year with their outstanding maturity. The great care and attention given to treating the grapes on the vineyard and in the cellar give each vintage an individual character making this wine a great representation of the ARS MAGNA line.
Harvest and vinification
The grapes are picked by hand and selected, cleaned and destemmed. The obtained grapes are then subjected to cold maceration for around 48 hours. Fermentation takes place at controlled temperatures in stainless steel tanks and wooden barrels followed by maceration for 10-15 days. The wine obtained after the tapping is poured into new, fine-pored French oak barrels where the malolactic fermentation takes place. The subsequent ripening takes about 18 to 22 months with lees stirring. Finally, the Cabernet Sauvignon matures for at least another 18 months in its bottle.

ÔMINA ROMANA is a family-run vineyard and winery founded by the Börner family in 2007. When deciding where to start their business, they settled on the area of Velletri, among the lush volcanic hills of the Castelli Romani that overlook the Tyrrhenian Sea, about 40 km south of Rome.
