Hermitage 2015 Les Bessards Domaine Delas
Estate: The vineyard extends over 3 communes of the Drôme: Tain-l'Hermitage, Crozes-Hermitage and Larnage. The soils consist of granite arenas covered with micaschists and gneisses, but also beaches of alluvial round pebbles (this diversity explains the presence of localities in the appellation: Bessards, Greffieux, Meal, Roucoule, Beaumes, etc ... ). Sheltered from the north wind, most of the slopes are facing south. Good sunshine. With a production area of 134 ha, the annual production is 3,635 hectoliters, with a maximum allowed yield of 40 hectoliters per hectare. This cuvée is a plot selection. The grapes come exclusively from the oldest plot located on the place called "Les Bessards" in the heart of the hillside of Hermitage. This wine is elaborated only in the big years. Its production is voluntarily limited to 6,000 bottles (75 cl.) Per year.
Vinification: The grapes coming into the "Les Bessards" vintage are made manually, at optimum maturity. Vinification is traditionally done in open concrete vats after 3 days of cold pre-fermentation maceration. The fermentation is continued at a controlled temperature of 28 to 30 ° C. Pigeages and pumping over are done daily for ten days. The total duration of vatting can reach 20 days. After racking and pressing, the malolactic fermentation is carried out in oak barrels.
