70% of the wine remains 12 months in 2nd and 3rd use French oak barrels of 225 liters. It then rests in the bottle for 6 months.
It is recommended to accompany hard cheeses, stews and red meats.

Cold maceration is carried out at 7° C for 5 days. Alcoholic fermentation is then carried out at a controlled temperature in stainless steel tanks. Malolactic fermentation takes place in French oak barrels.
