The Ice Perdics is the product of a unique processing process. The grapes are harvested in mid-June, between 60 and 90 days after the usual date. At this point they have an advanced state of dehydration and therefore concentration of sugars, aromas and flavors. The grapes collected manually in boxes are taken to the cellar where they are subjected to temperatures below -8oC for several days.
In these conditions the winemaking process begins. The grapes are directed directly to pressing and the removal of the ice crystals, separated during this process, allows to obtain a juice or must with unique characteristics that ferments for more than 30 days at temperatures between 10 and 12 degrees Celsius. Slowly fermentation begins to slow down to stop completely, leaving a significant amount of residual sugar in the final wine.
