This is one of the standout bottlings in the Wine of the Sea collection. Produced by Villa Canestrari, the Garganega grapes are dried for about two months for concentration, and the wine spends a year in neutral/lightly toasted barrels before undergoing roughly 14 months of underwater aging in the Adriatic Sea.

The Tasting Panel – 96: Praises its sea-brine and wet-stone character, toasted hazelnut and white flowers, followed by concentrated lemon, lime and apricot. The texture is notably silky, with classic Soave salinity and nutty complexity.

Nose: White flowers, ripe peach and apricot with lemon, pineapple, toasted hazelnut, wet stone and subtle vanilla.
Palate: Richer and more developed than typical young Soave, showing concentrated stone and tropical fruit with a satiny texture, bright acidity and pronounced saline-mineral character.
Finish: Long and savory, with citrus, toasted nuts, mineral and a slightly peppery edge.
Sommelier’s Take
This is much more than a novelty bottle. The underlying Soave Superiore has enough acidity, concentration and texture to benefit from extended maturation, while the underwater aging gives it an evolved, rounded character. The coral- and shell-encrusted bottle also makes it an exceptional tableside conversation piece.
