Our Process
TRIMMING
Each agave piña is expertly trimmed close to the heart, leaving very little green leafy exposure. This elevated technique eliminates any bitter taste and creates a cleaner, more refined final flavor.
COOKING
The carefully trimmed agave is then placed into hand-built brick ovens where it is slowly roasted for more than two days. Embracing the traditional art of ‘slow cooking’ helps retain the naturally sweet and mellow flavors while preventing the cooked agave from caramelizing.
MACERATING
The cooked agave then passes through a modern roller mill process where it’s squeezed multiple times to separate the juice from the fibers, releasing the natural agave sweetness. To maintain a consistent sugar concentration, we combine the agave juice with de-ionized, reverse-osmosis treated water.
FERMENTING
Perfection doesn’t happen overnight. That’s why our fermentation process takes 48-60 hours on average, while many mass-produced tequilas are only fermented for 10-12 hours at a time. This slow approach results in a better quality tequila with a more complex, full-bodied flavor.
DISTILLING & BLENDING
We utilize a double-distillation process in traditional copper pot stills, to allow important characteristics such as taste, aroma, and body to fully develop. The first distillation extracts impurities and concentrates flavors, while the second enriches the alcohol content to its final state. After distillation, we carefully blend a pinch of ghost pepper essence into the finished tequila before bottling.
