The Story Behind the Wine:
Legend has it that once Judas died, he repented of his betrayal of Jesus, so after being forgiven he was resurrected in Broni, in Oltrepò Pavese. The citizens, recognizing him, wanted to kill him, but Judas healed the vines from diseases, so the locals named the wine after him, hence the name Sangue di Giuda (Judas' Blood).

SOIL: Clayey silty with calcareous marl located around the 45th parallel north

VINIFICATION: Destemming and crushing of the grapes, cold pre-fermentation to extract colour and aromas and fermentation at a controlled temperature of 25°C with selected yeasts
REFINING: In stainless steel tanks. Natural fermentation in autoclave with macro-oxygenation at 14 C with selected yeasts.
BOTTLING: cold sterile
ALCOHOL CONTENT : 7% vol
COLOR : Deep ruby red with purple reflections, compact and persistent foam
SMELL : Intense, persistent, fruity with notes of raspberry jam, blueberry, blackberry, hints of violet
TASTE : Sweet, fresh, velvety, with a persistent aftertaste of blackcurrant
RECOMMENDED PAIRINGS : Dry sweets, almond paste, fruit tarts and mature blue cheeses
INTERNATIONAL PAIRINGS : Cake with dried fruit – Greece / Roquefort – France
