DOBA YEJ
This is the first Mezcal that we have launched, distilled in a copper still and from a region other than the traditional one of Siete Misterios, Sola de Vega. After 3 years of seeing how Mezcal flooded the best places in Mexico and as a lover of the most demanding palates around the world, we saw that there was a gap where Mezcal could reach more people and diversify its way of being enjoyed; through the cocktail bar. For this reason we decided to launch this well-balanced Mezcal, which would have all the characteristics of a great Mezcal to be enjoyed on its own, as well as having enough character and strength to be mixed behind the bars without ever losing its essence. With 44% alc/vol it has the perfect balance to coexist in both worlds, in addition to its aromas and flavors being sublimely perceived both on the nose,

The Los Siete Misterios Mezcal family was born in 2010 after a trip made by its founders,
where the passion, traditions and culture of Mexican roots inspired this distillate
that seeks to revive the past and integrate it with the present.
The Seven Mysteries are a family made up of We, the Mezcal Masters
and the Oaxacan communities that work together to provide the best we have;
love and dedication synthesized in Mezcal.
HARVEST
The most important thing, our raw material, we only use mature plants
BAKED
Using the traditional conical underground oven, the palenqueros use firewood from the region to heat river stones, which in turn are used to cook the ripe piñas for three to five days.
CRUSHED
Once the piñas are fully cooked, they are left to rest for a couple of days before they go to the grinding area where the traditional Chilean Tahona is used or they are crushed by hand in wooden canoes with mallets carved by themselves.
FERMENTATION
The environment and the temperature of the region are responsible for naturally fermenting the maguey juice and fibers, previously cooked and crushed, without the need to add anything, except pure spring water.
DISTILLATION
We carry out 2 types of distillations depending on the product, in both cases at least 2 distillations are carried out, either in a copper still for artisanal mezcals and in a clay pot for ancestral mezcals.
